Leek is a winter vegetable widely cultivated and consumed across all regions of Turkey. It plays an especially important role in the diet of regions with a continental climate, where winter vegetables make up a significant portion of consumption. Leeks are generally classified into two main types: summer leeks and winter leeks. Summer leeks are light green in color, have a softer texture, a shorter shelf life, and are sensitive to cold. Their leaf blades are shorter and more upright, and their stem (shaft) is 2–3 times longer than in winter varieties. Winter leeks, on the other hand, are hardier and suitable for export. In Turkey, winter leek varieties are the most preferred for export, with production mainly concentrated in Tarsus (Mersin) and Torba (İzmir).
